Apple Pie
8 Apples All Varieties-peeled, cored, sliced
2/3 C Sugar
1/2  t cinnamon

1/2  t nutmeg
Crust
3 C Flour,
1/2 t. salt, 1/2 C Lard. Mix, knead.
Using a fork, poke holes in the bottom crust before putting in mixture. For the top crust, cut out shapes and lay them aside. Put mixture into the bottom crust, lay on top crust, and lay on the shapes. Bake at 400 until top is golden brown. Put foil over the edges if it starts to burn.


Orange Dream
1 box tapioca pudding
1 box vanilla pudding
Mix with 3C water
Bring to boil
Set aside to cool
add
8oz Cool Whip
1 can drained mandarin oranges.

Refrigerate


Fruit Crisp

2 Large Cans fruit (or equal fresh)

3/4 C Brown Sugar

1/2 C Flour

1 C Oats

1 t Cinnamon

3/4 t nutmeg

6T Butter -melted

Spread fruit on bottom of pan.  Mix ingredients and sprinkle over fruit.  Bake 30min at 375.


Strawberry Cream

2 C Frozen Strawberries

1/4 Confections Sugar

1/4 C Whipping Cream

Put strawberries and sugar in food processor.  Beat cream until stiff peaks form.  Fold in berries and serve


Zucchini Bread

3 C flour

1t salt

1t baking soda

1t baking powder

3t ground cinnamon

3 eggs

1C veg oil

2 1/4 C white sugar

3 t vanilla extract

2 C grated zucchini

1 C chopped walnuts -optional

1 C choc chips -optional

Grease two 8 x 4 bread pans or one bread pan and another muffin pan.  Preheat to 325.  Add all ingredients in bowl and mix well.  Add zucchini and nuts/choc chops last, mix.  Pour batter into pans.  Bake for 40-60min, or until tester comes out clean.


Amish Bread

Do not refrigerate. Do not use metal spoon or bowl to mix.  If air gets in the bag, let it out It is normal for the batter to thicken, bubble or ferment.


Day 1  This is the day your batter is received-do nothing

Day 2  Squeeze the bag

Day 3  Squeeze the bag

Day 4   Squeeze the bag

Day 5  Squeeze the bag

Day 6  Add:

1C flour

1C sugar

1C milk

Day 7  Squeeze the bag

Day 8  Squeeze the bag

Day 9   Squeeze the bag

Day 10  Combine in a large bowl:

1C flour

1C sugar

1C milk

Mix with wooden spoon.  Pour four 1-cup starters into Ziplock bags.  Keep one starter for yourself and give the other three starters to friends, along with a copy of the instructions.


To the remaining batter add:

1C oil or 1/2 C oil and 1/2 C applesauce

1C sugar

1t. Vanilla

3 large eggs

1 1/2 t. baking powder

2C flour

1/2 C milk

1/2 t. baking soda

1/2 t. salt

2 t. cinnamon

1 large box of instant vanilla pudding


Grease 2 bread pans, mix ingredients and pour in.  Bake 350 for 1 hour.


Optional: Add  1C chopped pecans and/or 1C raisins

1 small can crushed pineapple well drained

1 can blue berries well drained

1 can cranberries whole - leave cinnamon out

1 apple chopped then add pecans, raisins and walnuts

1 banana and chocolate chips


Pumpkin Fudge

2 T butter

2 1/2 C white sugar

2/3 C evaporated milk

1 cup white chocolate chips

7 ounces marshmallow crème

3/4 cup canned pumpkin

1 t ground cinnamon

1 t vanilla extract


Line a 9x9 inch pan with aluminum foil, and set aside.

In a 3 quart saucepan, heat milk and sugar over medium heat. Bring to a boil, stirring occasionally with a wooden spoon.

Mix in pumpkin puree and cinnamon; bring back to a boil. Stir in marshmallow creme and butter. Bring to a rolling boil. Cook, stirring occasionally, for 18 minutes.

Remove from heat, and add white chocolate chips and vanilla. Stir until creamy and all chips are melted. Pour into prepared pan. Cool, remove from pan, and cut into squares. Store in a cool, dry place.

Creamsicle Shake

2 Scoops Vanilla Ice Cream

1 Scoop Orange Sherbet

1/3 C Milk

1/2 C OJ

Mix in blender, drink!


Banana Shake

1/2 C Milk

1 Ripe Banana

3 T Malted Milk Powder

1 t Vanilla

6 Scoops Vanilla Ice Cream

Mix in blender.


Strawberry Shake
8oz bag of frozen strawberries or blueberries
8oz yogurt/any flavor
Mix in blender until desired consistency. Pour into cups adding whipped cream and chocolate on top.

Chocolate Malt
2 scoops of chocolate ice cream
1 C Milk
2 T Malt
Mix in blender and pour into cups. Add toppings!

Banana Smoothie
2 Frozen bananas
2 T Milk
8oz Yogurt/any flavor
Blend and drink!

Cherry Vanilla Smoothie

1C Apple juice

1/2 C Vanilla Yogurt

1t Vanilla Extract

1 1/2 C Frozen Cherries

Mix in blender, drink!


Pineapple Crush Smoothie

1/2 C Orange Juice

1/2 C Pineapple Juice

1 C Frozen Pineapple Chunks

1/2 C Frozen Banana

Mix in blender, drink!


Pink Banana Smoothie

1 C Apple Juice

1 C Frozen Strawberries

1 Frozen Banana

1/2 C Yogurt

Mix in blender


Van-Org-Bana-Smoothie

8 oz Vanilla Yogurt

1 C Orange Juice

1 1/2 C Fresh Frozen (strawberries, peaches, blueberries, or raspberries)

1 Banana

Mix in blender, drink!


Cookies & Cream Shake
3 Scoops vanilla ice cream
4 choc sandwich cookies
1/2 C Milk
Blend and drink!

Chocolate Banana Shake

3 Scoops Chocolate Ice Cream

1/2 Banana

3 T Malted Milk Powder

1/2 C Milk

Mix in blender.


Peanut Butter Shake
8 Nutter Butter cookies
1 pint vanilla ice cream
1 C Milk
1/4 C Choc Chips
Blend and drink!

Peach & Peanutbutter Shake

1 pint Frozen Vanilla Yogurt

1 fresh peach, cut

1 T honey

1 T creamy peanut butter

Mix in blender


Delicious Punch
7up or Orange Pop
Orange Sherbet
Vanilla Ice-cream
Scoop in ice-cream and sherbet into a punch bowl, add 7up or orange drink.


Hot Chocolate
1 8qt box Dry Powdered Milk
1 8oz jar Powdered Non-Dairy Creamer
1 lb Powdered Sugar (sifted)
1 16oz can Presweetened Cocoa
Combine all ingredients dry. Store in air tight container. Serving 3/4C hot water with 1/4C mix. Stir and top with marshmallows or whipped topping.

Hot Chocolate tastes great with one or more of the following inside: Marshmallow's, cinnamon stick, whipped cream, M&M's, marshmallow crème, or a scoop of vanilla ice cream. Think of your own and add it in!


Old Fashioned Soda- Lime Ricky

Glass of crushed Ice

2 oz Lime Syrup

Fill with Seltzer

Lime slice on top

Old Fashioned -Black Cow

3oz chocolate syrup large glass

Fill 1/2 full with rootbeer

Stir

Ad 1-2 scoops of vanilla ice cream

Fill to top with rootbeer


Old Fashioned -Soda Fountain Sodas

Choose one syrup: cola, rootbeer, sherry, chocolate, strawberry or vanilla.

3oz of syrup in large glass

Fill half full with seltzer

Stir

Add 1-2 scoops vanilla ice cream

Fill to top with seltzer


Chi

2c water

4 bags black tea

2c milk

2T honey

1/2t ground ginger

1/2t ground cinnamon

1/4t ground nutmeg


Heat water to boiling. Add tea bags; reduce heat. Simmer 2 minutes. Remove tea bags. Stir in remaining ingredients. Heat to boiling.

Stir with wire whisk to foam milk. Pour into cups.

Main Dish

Black Bean Soup
1 Can Diced Tomatoes (or fresh)
1 Can Black Beans
1 Can Garbanzo Beans
1 Can Whole Kernel Corn
1 Packet Taco Seasoning
1/2 Onion, chopped
1 Packet Dry Ranch Dressing
Pour all into pot and heat!
Very easy to make and very yummy!
Top with sour cream or cheese and eat with tortilla chips


Taco Salad
1 head lettuce -chopped
1 tomato -chopped
1 sm onion -chopped
1 bag cheddar cheese -shredded
1 bag Dorito's Taco -crushed
Catalina French dressing
Add all ingredients in bowl. Pour on dressing a little at a time right before serving.


Vegetarian Lasagna
1 lb. Lasagna Noodles -cooked
20 oz. Spinach -frozen thawed
3 t. Basil
1 T. Parsley
4 C Tomato Sauce
1 lb. Tofu
½ T. Garlic powder
1 16oz Cottage Cheese (low fat)
1 16oz Cheddar Cheese (low fat)
Mix: Cottage Cheese, Parsley, Tofu, and Spinach, Cheddar Cheese, Spinach. Sauce: Tomato Sauce, Garlic Powder, Basil. Layer ingredients: Sauce, Noodles then Mix. Bake 350, 9x13 pan, until cheese is golden brown.


Quick Cheese Pizza
4 Tortillas/4 Bagels
Tomato sauce
Any cheese-shredded
Bake in oven at 350 until cheese is golden brown.


Hummus Sandwich Spread

1 bunch cilantro

1/4 cup dill
3T lemon
4 cloves garlic
1/2 cup tahini
2 cans garbanzo beans
1/4 t chili powder
1 t salt
Slice tomato and onion to add on top.  Blend everything until smooth. Adjust amounts to taste.


Pumpkin Pancakes
2C flour
2T brown sugar
1T baking soda
1 1/4t pumpkin pie spice
1 3/4 C milk
1/2 C canned pumpkin
1 egg
2T canola oil (for pan)
Add in chocolate chips if desired
Mix all ingredients. Pour by 1/4 cup full onto hot griddle. Flip when edges are dry and bubbles appear. Serve with warm syrup or fruit.


Fried Green Tomatoes

Flour

Eggs

Slice Tomatoes, dip in egg mixture, dip in flour.  Place in skillet with a bit o oil or butter, med heat, turning once.  They will be brown and tender when done.  Salt and pepper to taste.


Cheese Bread

1 Can whole black olives, chopped

1/2 chopped Vidalia onion

2 Green onions, sliced

¾ lb Monterey Jack/Mozz cheese, shredded

½ C Mayo

1 Stick butter, softened

1 loaf French bread or Crackers


Combine and mix well. Slice French bread in half lengthwise and spread mixture over the halves. Bake at 325 degrees for 35 minutes, or until cheese is melted and starting and light brown. Cut into slices and serve with salad, soup, pasta, or as a appetizer.


Optional: replace olives with jalapeños, mushrooms, onions.


Taco Casserole
6 C corn tortilla chips
2 C vegetarian chili with beans
1 C shredded Cheddar cheese
2 C shredded lettuce
2 roma (plum) tomatoes, chopped
1/2 C salsa
1/4 C sour cream
Preheat the oven to 350 degrees
Place chips in the bottom of a 9 inch square baking dish. Pour chili straight from the can over the chips. Sprinkle shredded cheese over the top.
Bake for 20-25 minutes in the preheated oven, until chili is bubbling and cheese is melted. Top with lettuce, tomato, sour cream and salsa in the pan, or after serving.

Salsa

6 Plum tomatoes

1 onion

Cilantro

Lime juice

Salt -to taste

Chop all ingredients and place in a bowl, eat with chips


Guacamole

4 ripe avocados, diced
3 T lemon juice
dash of Tabasco sauce
1/2 C diced red onion, diced
1 garlic clove, minced
1 t kosher salt
1 t black pepper
1 tomato, seeded and diced
Add avocado, lemon juice, onion, garlic, salt, pepper and toss. Add tomatoes. Mix well
